GYOTAKU Protocol is the family of methods GYOTAK has built for leaving records of physical goods that cannot be deleted, altered or denied — catch records, cold-chain temperatures, physical fingerprints of packaging, and proofs of purchase — written to the Midnight blockchain and verifiable by anyone. GYOTAK is the business that runs it: a sashimi-grade flash-frozen seafood company in Pranburi, Thailand, and the protocol’s reference implementation.
GYOTAKU Protocol は、GYOTAK が作ってきた「削除も改変も否定もできない、モノの記録」を残すための技術の総称です。水揚げの記録、冷凍保管の温度、梱包の物理的な指紋、購入の証明などを Midnight ブロックチェーンに刻み、誰でも検証できるようにします。GYOTAK はそれを運営する事業です。タイのプランブリで刺身用の急速冷凍魚を扱う水産会社であり、このプロトコルの参照実装でもあります。
GYOTAKU Protocol คือชุดวิธีการที่ GYOTAK พัฒนาขึ้น เพื่อบันทึกข้อมูลของสินค้าที่จับต้องได้ในแบบที่ไม่สามารถลบ แก้ไข หรือปฏิเสธได้ ได้แก่ บันทึกการจับปลา อุณหภูมิในห่วงโซ่ความเย็น ลายพิมพ์ทางกายภาพของบรรจุภัณฑ์ และหลักฐานการซื้อ โดยบันทึกลงบนบล็อกเชน Midnight และทุกคนสามารถตรวจสอบได้ ส่วน GYOTAK คือธุรกิจที่ดำเนินการระบบนี้ เป็นบริษัทอาหารทะเลแช่แข็งแบบเร็วเกรดซาชิมิในปราณบุรี ประเทศไทย และเป็นต้นแบบการใช้งานจริง (reference implementation) ของโปรโตคอลนี้
Gyotaku (魚拓) is the Japanese art of pressing a fish onto paper to capture its exact form. The two names share that word, and differ by one letter on purpose.
GYOTAKU — the part we keep. The protocol keeps the traditional spelling because it keeps the traditional meaning. The word carries three:
GYOTAK — the part we change. The business drops the “u” deliberately. A tradition carried abroad unchanged is not automatically welcomed; it has to fit the people and the place it serves. GYOTAK is not bound by form — and without the “u”, the name is easier to read and friendlier for people outside Japan. The same principle runs through the whole business: rather than copying traditional Japanese processes, GYOTAK built its own flash-freezing method, its own traceability and temperature monitoring, and its own software.
One letter separates what we adapt from what we never compromise. GYOTAK adapts to its market; GYOTAKU never compromises on the record.
魚拓（gyotaku）は、魚を紙に押し当てて、その姿を正確に写し取る日本の技法です。二つの名前はこの言葉を共有し、あえて一文字だけ違えています。
GYOTAKU ― 守るところ。プロトコルは伝統的な綴りを守ります。伝統的な意味を守るからです。この言葉には三つの意味が重なっています。
GYOTAK ― 崩すところ。事業名は、あえて「u」を抜いています。伝統をそのままの形で海外に持ち込んでも、そのまま受け入れられるわけではありません。仕える土地と人に合わせるべきで、形にとらわれるべきではない。u を抜いた方が、日本の外の人にも読みやすく、親しみやすい名前になります。この考えは事業全体を貫いています。日本の伝統的な製法をなぞるのではなく、独自の急速冷凍の方法、トレーサビリティと温度管理、ソフトウェアを自分たちで作ってきました。
一文字が、合わせるものと決して譲らないものを分けています。GYOTAK は市場に合わせ、GYOTAKU は記録について譲りません。

GYOTAKU Protocol proves that a record existed at a point in time and has not been changed since. It does not, by itself, prove that the physical event the record describes actually happened. Each report states its own limits.
